Our sauces are made from 100% fresh picked, organic peppers that we cultivate year-round on one of our South Florida Micro Farm or Gardens.
For every gallon of ferment made, 3200 to 3700 grams of produce is used before any brine is added. For our blends 55% to 80% is specialty hot peppers. For our new "Pure Pepper Line" 100% is specialty hot peppers. That is up to 8.25 pounds of peppers for every gallon of ferment made. (Pepper cost, Habaneros $7.99/lbs to Chocolate Bhutlahs $70/lbs.) The average per pound cost of our ferments pepper content is +/- $28/lbs which brings the cost of every ferment made to $125 - $250, and we bottle 10 to 14 sellable bottles for ever ferment made.

All our sauces are "LIMITED EDITIONS", and as such come with a bold promise to be some of the best hot sauce available to date. We are constantly in pursuit of "Capsicum Perfection" and as such, will not be restocking most sauce editions once the initially available batch has been sold. Only the ferments that exceeds our own critically judgmental palettes, are offered as hot sauce editions for your distinguished convictions and very few will be maintained as flavors to be restocked once the initial quantity has been sold out. That said, any sauce can be pre-ordered at a 20% discount once inventory has been depleted and all remain quantity from such pre-orders will be offered at regular price once made available for shipping.
